In-N-Out Burger owner and president Lynsi Snyder-Ellingson has given fans in three more states a reason to hope. In a long interview released for the chain’s 78th anniversary, she named Oklahoma, Arkansas and Mississippi as possible future markets, while stopping short of announcing any restaurants.

The comments landed the same week In-N-Out opened its eastern U.S. corporate hub in Franklin, Tennessee, a project the Nashville Business Journal valued at $126 million.

What Lynsi Snyder said about expansion

Snyder-Ellingson, who often goes by Lynsi Snyder, made the remarks in a nearly 50-minute conversation with actor Terry Crews, according to Patch. KOCO in Oklahoma City reported that the video was posted on In-N-Out’s website.

“If you look at the map, you’ve got Texas. There’s Arkansas, Mississippi, Oklahoma,” she said. “There’s some states there that are possibilities, you could say.”

She did not say whether there were active talks about specific sites or a timeline, KOCO reported. She did confirm a nearer-term move: “New Mexico has been waiting for us, and that will be soon.” New Mexico is set to get its first In-N-Out in 2027.

Why those three states?

The answer is the supply truck. In-N-Out insists on fresh ingredients, and Snyder-Ellingson explained that the company was able to enter Tennessee because it could deliver fresh meat from its Texas warehouse, Patch reported. Oklahoma, Arkansas and Mississippi sit along or near that Texas-to-Tennessee distribution corridor.

She also described how the chain picks new markets. “We have a whole sheet of the different states and how many requests we get from each state,” she said. That customer demand is weighed alongside real estate research, logistics and the company’s habit of slow, controlled growth.

For now, KOCO noted, the closest In-N-Out for Oklahomans is in Denton, Texas.

The Tennessee headquarters

In-N-Out opened its first Tennessee restaurants in December 2025 and now has five in the state, according to Patch. The new Franklin office, near Nashville, is designed to employ nearly 300 people and sits, fittingly, on a street named Double Double Drive, the Nashville Business Journal reported.

The move is personal for Snyder-Ellingson, whom the Nashville Business Journal describes as a billionaire who now lives in the area. Patch reported that she and her husband had at first considered moving to Colorado instead. The Franklin hub lets her stay closely involved in operations while living there.

Is In-N-Out leaving California?

No, according to its owner. Snyder-Ellingson dismissed rumors that the chain could close its California restaurants, which her grandparents Harry and Esther Snyder started in Baldwin Park in 1948.

“This is where we started. It’s where we are now, and it’s where we will always be,” she said, per Patch. “We continue to grow in California, and we have lots of stores slotted for future cities in California.”

The company does plan to consolidate its Southern California corporate operations in Baldwin Park and close its Irvine headquarters, Patch reported.

How fast will In-N-Out grow?

Not very, by design. The chain operates in 10 states with more than 400 locations, KOCO reported, and expanded into Washington and Tennessee in 2025. Snyder-Ellingson said the company sometimes misses its own yearly opening targets because of permits and other delays, and that protecting quality and culture matters more than speed.

“If I ever felt like we were slipping or losing our way, growth would look a lot differently,” she said.
